PINEAPPLE WINE
 
INGREDIENTS

2 medium pineapple
2 quarts water
3 lbs sugar
1/2 oz yeast
juice of 1 lime
1 lb raisins
 
METHOD:

Peel pineapple then grate, squeeze and strain. Dissolve in water add to pine juice. Add chopped raisins and yeast. Pour into an eartherware jar, cover tightly and let stand for 21 days to ferment. Strain and bottle. Improve with age.
