| POTATO WINE |
| INGREDIENTS 5 lbs potatoes peeled and sliced 4 lbs Demarara sugar 1 gal. water 2 oranges 1 pk. yeast (prepared) 2 lemons 1 oz. bruised root ginger |
| METHOD: Cook potatoes in water for 1/4 hour. Thinly pare the rind from lemon and oranges and add the ginger. Boil for another 1/4 hour. Strain on to the sliced lemons and oranges and sugar. Stir until the sugar is dissolved. Add the yeast and allow to stand overnight. Strain, pour into a jar and seal with an airlock, leave to ferment. When fermentation is complete, strain off and bottle. |
