YAM SOUP
 
INGREDIENTS

8 ozs white yam
1/2 pt. milk
4 1/2 cups stock or water
1 small onion
Bouquet Garni (bunch of herbs tied in muslin)
2 ozs. grated cheese
2 tbsps chopped parsley
salt, pepper to taste
 
METHOD:

1. Put the stock or water in a saucepan with the onion and herbs and cook for 10 - 15 minutes.
2. Heat the milk and blend well with the white yam.
3. Remove the bunch of herbs.
4. Add the white yam mixture to the stock mixture and blend well together.
5. Add the grated cheese and season to taste.
6. Sprinkle in the parsley.
7. Serve hot. Soup as a first course to your meal. 1/4 pint of soup per person.
