RICE WITH BEEF AND VEGETABLES
 
INGREDIENTS

1 pkg. rice (1 lb.)
2 1/2 pts. water
1 tsp. oil
1 onion, chopped
1/2 lb minced beef
1 tbsp. sauce of choice for seasoning
1 tsp ketchup or tomato paste
tomatoes, cut into chunks
diced pumpkin or carrots
1 tsp. salt
black pepper
 
METHOD:

1. Bring 2 1/2 pts water to boil. Add salt. Add rice, cover and cook.
2. Heat oil and fry onion lightly. Add beef and fry for 2 mins.
3. Add all seasonings and ketchup.
4. Add 1/2 pt. water and cook slowly until tender
5. When rice is almost finished, add pumpkin, tomatoes and beef.
Mix carefully and complete cooking.
