STEWED HICATEE
 
INGREDIENTS

1 medium sized hicatee
1 chopped onion
salt and pepper and recardo to taste
1/2 cu coconut oil
vinegar
 
METHOD:

1. Clean hicatee, wash with vinegar, and season with salt, pepper, recardo and chopped onion.
2. Heat oil in large frying pan.
3. Add seasoned meat and brown on both sides. Do not cover.
4. Cook until tender in the juice which comes from the meat.
5. As this dries out, add a little water from time to time.
6. Turn meat occasionally. Serve with rice and fried ripe plantain.
