| BAKED STUFFED SNAPPER |
| INGREDIENTS 1 small red pepper 2 tsbs bread crumbs 3 ozs. grated cheese 1 tomato, peeled 2 tbsp. grated onion 2 tbsp lime juice 2 tbsp sweet pepper, choppped 1 lemon salt and pepper to taste |
| METHOD: 1. Wash fish and rum in line juice 2. Crush tomato to pulp and add to bread crumbs, cheese, onions and sweet pepper... add seasoning 3. Stuff fish and sew securely 4. Place on greased tin 5. Bake at 350°f for 30 mins. 6. Garnish with lemon slices and carrot sticks |
